Y’all!  I have been a HUGE fan of the crockpot lately because I love the fact that you can literally just throw it all in the pot, do what you need to do for some hours, and then come back and everything is all done.  A few nights ago, I made a delicious meal in the crockpot and it was SO GOOD!  Fred literally went back after his first plate and got two servings because he said it was one of his favorite meals that I have cooked in a while.  The best part of this meal is that if you do not have a crockpot, then you can honestly just cook it on the stove.  It is super simple, so fun, and will have your house smelling so good for hours!

Here is all that you need to get started:

A pack of chicken ( I got three pretty decent sized chicken breasts)

1 Large Onion

5 Poblano Peppers

4 Jalapeno Peppers

2 Jars of Tomatillo Sauce

2 Cans of Green Chiles

Black Pepper, Salt, Cumin, Paprika, Garlic Pepper, and Onion Powder

You will want to start off by cleaning and seasoning your chicken.  I seasoned the chicken with black pepper, salt, ground cumin, paprika, garlic powder, and onion powder because it will give the chicken and the entire meal a really nice flavor.  If you throw it in the crockpot make sure you put a little bit of chicken broth in the pan so that it does not stick or burn to the bottom, but if you are cooking it on the stove just throw a little bit of oil in the pan and cook it until it is done.

While the chicken is cooking, you will want to have your oven on broil (I did the low broil) and get out your cookies sheet.  Once the sheet is out you will want to layer it with foil and then add your poblano peppers and the jalapeno peppers on the sheet (make sure you wash them really well first!).  After the peppers are washed, layer them on the pan and stick them in the oven for about 8 minutes on each side.

Now, while the peppers are broiling in the oven you will want to finely dice up the entire onion and set them to the side.  Once the chicken is finished cooking, you will pull the chicken off and put the onions and both cans of the green chiles in your pan or your crockpot.  You want the onions to be cooked until they are soft, so put a lid on your pan or your crockpot to let it steam and get soft.

At this point, your peppers in the oven should be finished and you will want to pull them out and place them in either a ziplock bag or a paper bag to let them sweat for about 15 minutes.  Once those 15 minutes are up, you will then want to peel the skin off of all of the peppers, take the seeds out, and then finely dice them up.  I would HIGHLY recommend getting some cooking gloves if you have them because the peppers burn so bad after taking the seeds out and dicing them up. If you like super spicy food as I do, then you can add a few of the seeds into the pan with the chiles and onions!

Once you have the peppers chopped up, then you will want to add the peppers in with the onions and green chiles.  Once you have the peppers, onions, and green chiles mixed in, then you will want to add in one whole jar of the tomatillo sauce and then half of the second jar of the tomatillo sauce.  You can let this marinate on medium while you are shredding up the chicken to create some shredded chicken.  After the chicken is shredded, then just add it into the pepper and onion mix and allow it to soak up all of the juices.  Make sure you test some and add in more seasoning if needed.  I let it sit for about 5 – 10 minutes on low and it was PERFECT!

After all the ingredients are all marinated together, then you can sprinkle some cheese on it, but this is totally optional.  I added in some Monterrey Jack cheese to help absorb some of the juices and give it a little bit of cheesiness, but you definitely do not have to.  All together the meal is complete and ready to eat.  You can pair it with some tortillas as I did or you can add it to some white rice as Fred did, but either way, I can promise you will enjoy it because it is so flavorful and so good!  You can even add some sour cream to the top and it really sets the flavor off!
