Hey y’all!! Y’all know I love some pasta and I have especially been LOVING this meatless pasta lately. I like to call it Penne Pasta with Vodka Sauce minus the vodka! I refuse to buy a whole bottle of Vodka just for some pasta lol, so I literally just do without it. It is super simple to make, it is so good, all of the ingredients are super cheap to pick up, and it is beyond filling. If you like creamier pastas, then you will love this because I have the perfect mix of heavy cream and tomato puree to make it just that. Here is a list of ingredients that you will need:
1 Large Onion
3 Tbsp. of Butter
2 Tbsp. of Oil
1 Box of Penne Pasta or Bowtie Pasta
1 29 oz. Can of Tomato Purée
2 Cups of Heavy Whipping Cream
Maybe about 4 – 5 Squeezes of Minced Garlic (Sorry about my measurements lol)
Black Pepper, Salt, and Crushed Red Pepper
Grated Parmesan Cheese (not required)
Everything should cost around $11 – $15 if that! That is why I love it and the leftovers taste delicious, so that is even better. To get started, all you have to do is finely dice up the entire onion and get your water boiling for the pasta. I would try to get a large onion because this really helps to flavor the sauce to a whole different level.
Once you finely dice up the onions, you will want to get a large pan and start to melt the butter and the oil. I used veggie oil, but you can literally use any type of oil for this. After the butter and oil are both melted, you will then want to add in the few squeezes of minced garlic and the onions and let them cook until they are fully translucent and Sautéed.
After the onions and the garlic are cooked in, then you will want to add in the entire can of tomato purée and let it start to cook with the onions. I usually leave the stove on about medium-low and just let the purée really cook down and start to boil a little bit. I forgot to take a picture of this process, but just know that when the purée starts to boil you want to turn the heat down to low.
After you turn it down, then you will want to add in the 2 cups of heavy whipping cream. I usually use a silicone spatula and typically fold in the cream with the tomato purée until it is fully mixed together. After I see that it is mixed in, then I add in the salt, black pepper, and some crushed red pepper. You can add as much as you want, just make sure that you taste as you go. I typically like my pasta a little on the spicy side (shocker), so I usually add in more red pepper than anything. After you have the sauce flavored to your liking, I usually add in some grated parmesan cheese in it and it will taste so good!
Once your sauce is boiling, then you can add in your noodles. Let them soak in all of the sauce and warm the noodles back up and then simply enjoy. I like to top my pasta with more grated cheese and some red pepper and it tastes divine!
